Bread uttappam





 Ingredients

dosa batter     - 3 cups
bread slices   - 4 cups
oil for toast
carrot  finely chopped - 1/4 cup
onions chopped   - 1/4 cup

ginger finely chopped  - 1 tsp
green chillies finely chopped  - 1/2 tsp


For tempering
oil  - 1 tsp
mustard seeds  - 1/2 tsp
jeera seeds   - 1/2 tsp
hing      - 1/4 tsp
curry leaves  - 1 string







Method

1.Take a pan heat oil add items as mentioned in tempering crackle it.
2.Now add onions,ginger,green chillies,carrots & salt fry it for 3 min.,
3.Add this to the dosa batter and mix it well.
4.Trim the bread slices and dip into the batter.
5.Toast these slices on hot tawa on medium flame drip oil around the bread slices and close with lid .
6.Toast on both sides now bread uttappam is ready to serve with peanut chutney.








APPAM RECIPE




Ingredients:

white rice         -2 cups
cooking soda       -1/3 tsp
cooked rice        -1/4 cup
sugar              -1 tsp
coconut grated     -1/2 cup
salt as required


Method:

  • Soak the rice for 4hrs .
  • And grind this rice with coconut,sugar,cooked rice by adding water in between each interval of grinding till the batter gets smooth.
  • Let this batter mix with salt,cooking soda and sugar with hands for fermentation overnight or the batter volume gets double.
  • Now take the deep bottomed kadai or appachatti and greased with oil lightly and wipe with kitchen towel if the kadai is non stick don't grease.
  • And take the ladle full batter, pour into the heated  kadai and make the batter swirl in the kadai and when holes comes in the batter then close with lid for 5 min.
  • After cooked the appam leaves the sides then remove appam from the kadai.
  • If we want crispy we have to cook more 5 min or if we want white appam then remove when cooked.
  • Serve this appam with coconut milk or vegetable stew. 


COCONUT MILK RECIPE

Ingredients:

coconut grated  -1 cup
Sugar           -1/4 cup or as per u r taste
Elaichi powder  -2 nos
Hot water       -2 cups





Method:

  • Take the mixie jar put elaichi,coconut make a fine power then add little water and strain the coconut milk by adding water (hot) .
  • Like this make coconut milk  nearly 2 1/2 cups of milk in a bowl stir well by adding sugar and serve this with appam. 




DHALIYA IDLY


It is very healthy recipe to diet madies,diabetic persons.broken wheat granules said to be Dhaliya in hindi.It is very simple and instant making idli's which are available in kicthen.


Ingredients:


Wheat rawa        -1 cup
Curd              -1/2 cup
water             -1/4 cup
Onions chopped    -1/4 cup
Carrots grated    -1/4 cup
Capsicum chopped  -1/4 cup
Oil for seasoning -1 tbsp
green peas boiled/frozen -1/4 cup

Seasoning items

mustard seeds -1/2 tsp



jeera/cumin   -1/2 tsp
urad dal      -1/4 tsp
curry leaves  -1 string


Method:

  • Take a pan pour oil heat the pan add seasoning items let it splutter.
  • Add onions,carrots,peas,capsicum just fry not too much because we will steam.
  • Now add dhaliya just fry till it get hot only.let it cool for awhile
  • Now add curd and salt and make batter by adding water to it like idli batter not too thick/thin.
  • Grease the idli moulds and pour the batter and steam cook for 10 -15 min or till done.
  •  pierce it with toothpick /fork when it comes out clean not sticky any batter to it.
  • And serve with any green chutney.


INSTANT OATS DOSA

This dosa batter has not to ferment.It is instant and healthy vesion dosa.Those who are bored with regular dosas and variety dosa lovers should tried this recipe once.


Ingredients:


Oats                  -1/2 cup
Rice flour            -1/4 cup
semolina/rawa         -1/4 cup
Curd (sour)           -2 tbsp
Ginger chopped        -1/2 tsp
Jeera/cumin           -1 tsp
Green chillies paste  -1/2 tsp
Onions finely chopped -1/4 cup
Peppercorns coarsely crushed - 1/2 tsp
Curry leaves & coriander leaves finely chopped -1/4 cup
water          -1 1/2 cup or as required for the dosa consistency


Method:

  • At first dry roast oats cool it  & make powder.
  • Take a bowl add oats powder,semolina,rice flour,salt ,curd and water mix it well and make a thin batter & keep aside for 10-15 min.
  • Now add onions,giger,green chillies,curry&coriander leaves,jeera,pepper and mix properly ,
  • Take a ladle full batter and pour from outer side to innerside on the dosa tawa it gives porous dosa & put oil on dosa and toast it.
  • Serve with onion chutney/coconut/tomato chutney.



INSTANT OATS DHALIYA IDLI


Ingredients:

Oats            -1 cup
Dhaliya         -1/2 cup
Curd            -1/2 cup
Lemon juice     -1/2 lemon
Eno fruit salt/cooking soda -1/2 tsp
Water           -1/2 cup or as required for idli batter
Vegetables finely chopped as desired -1/2 cup(like carrots,beans) 

For Seasoning 
Oil cooking           -1 tbsp
Mustard seeds         -1/2 tsp
Jeera/cumin           -1/2 tsp
Urad dal              -1/4 tsp
Chana dal             -1/4 tsp
Ginger chopped        -1 tsp
Jeera/cumin           -1/4 tsp
Green chilies chopped -1 tsp
Curry & coriander leaves finely chopped - 1/4 cup

Method:

  • Dry roast the oats and cool it & make powder.
  • Heat a pan  put oil add seasoning items and vegetables,ginger,greenchillies,curry&coriander leaves let fry .
  • Then put dhaliya roast it to just hot not too much fry.let it cool
  • And add curd ,lemon juice & salt to this mix make batter by adding water just like idli batter not too thick.
  • Now add Enosalt mix slightly into the batter pour immediately in the greased idli moulds and steam it till the fork comes out clean when inserted in the idlis.
  • If the batter is kept for 1hr/1/2hr after adding enosalt the idlis didn't get spongy nor fluffy.so pls make idlis when add enosalt as soon as possible and enjoy the spongy idlis.

 

SOFT IDLIS






Ingredients:

Urad dal               -1/4 cup
Parboiled rice         -3 cups
Poha(puffed rice)      -1/4 cup
Fenugreek(methi seeds) -1/2 tsp

Method:

  • Soak rice, dal with methi seeds separately for overnight.
  • Next day morning soak poha for 1/2 hr before grinding the batter.
  • Now first grind the mixture of urad dal
  • Next grind rice by adding water little by little.
  • Mix both batter by adding salt with hands and make it to ferment overnight or till the batter volume get double.
  • Pour this batter in greased with oil/ghee in idli moulds and steam it for 10 min or pierce with toothpick or fork into the idli.
  • If the fork/toothpick comes clear it is cooked.
  • Serve with coconut chutney and sambar..



RAGI PUTTU

This Ragi is rich in calcium,iron and many more essential ingredients in it.Daily intake for kids to adults is good for health.Especially for women for bones after delivery & menopause Try this recipe 
daily bored dosa,idli....................


Ingredients:

Ragi flour      -1 cup
Rice flour      -1/4 cup
Grated coconut  -1/4 cup
Elaichi powder  -1/4 tsp
Salt            -1/4 tsp
Sugar/Jaggery   -1/4 cup or as per sweetness.
Water  as per  flour nearly -1/4 cup+2tbsp required for me.


Method:

Take a pan put ragi & rice flour together and dry fry till the flour gets hot & let it cool.





Now sprinkle water little by little and mix well with salt to the flour  till u get the unbreaked ball in your fist.Then flour get ready for steaming.






Now take the coconut grattings  and put in the puttu maker as one layer and put flour and repeat it
till the top of the puttu maker.And steam it for 10-15 min.





Transfer it into the serving plate.And sprinkle with Elaichi & sugar /Jaggery.







Dosa with potato & carrot curry


Ingredients:


For Dosa batter
Parboiled rice     -2 cups
white/raw rice     -1 cup
Urad dal           -1/2 cup
Methi/Fenugreek    -1/4 tsp

Method:


Soak all the above with water  overnight or 5 hours and grind with water and make a batter and salt to it and mix with hands and let it ferment for 6 hrs or gets double in volume.
Make dosa on a hot and oil greased tawa.





For potato&carrot curry


Ingredients:


Haldi                     -1/4 tsp
Urad dal                  -1/4 tsp
Jeera/cumin               -1/2 tsp
cooking oil               -3 Tbsp
Curry leaves              -1 string
Mustard seeds             -1/4 tsp
Onions sliced             -1/4 cup
Grated carrot             -1/2 cup
Green chillies slit       -3 no's
Boiled & mashed potato    -1 cup

Ginger  finely chopped    -1/2 tsp
Coriander leaves chopped  -1/4 cup
Salt as per taste.



Method:


  • Take a pan put oil add mustard seeds,jeera,urad curry leaves,crackle add onions,green chilies,ginger fry it. 
  • Then add carrot,salt,haldi saute it for 5 mins.
  • Add boiled potato into it mix it well for 3 min and switch off the stove 
  • Transfer it to a serving dish and garnish with coriander leaves and serve with Dosa,puri's it goes well with this combination.
