Methi dal

Ingredients

methi leaves  - 1 cup  chopped
masoor dal     - 1/2 cup
tomatoes    - 1/2 cup  chopped
onions        - 1/2 cup  chopped
garlic      - 2 no's  finely chopped
green chillies   - 2 to 3 no's 
tamarind paste  - 1 tbsp
coriander powder - 1/2 tsp.

For seasoning
oil  - 2tbsp
mustard seeds  - 1/2 tsp
methi  seeds    - 1/4 tsp
hing     - 1/4 tsp
jeera   - 1/2 tsp



Method

1.First pressure cook the dal with haldi for 3 whistles.
2.Heat a pan with oil add items as mentioned in seasoning crackle it,then add onions & garlic fry it till it colour changes.
3.Now add green chillies,methi leaves fry it for a while then add tomatoes fry it well till it becomes soft then add tamarind ,salt ,dal & 1/4 cup water let it cook for 5 min., or the raw smell goes.
4.Sprinkle coriander powder & remove from the flame.
5.Serve it with steam rice or pulkas or as desired combination.

Drum stick gravy

 This gravy is said in Telugu as Munakkaya pulusu.Drum sick is very good vitamin rich vegetable.
We have to give to kids weekly twice.






Ingredients

drumstick pieces - 1 cup boiled
onions chopped  - 1/2 cup
tomatoes chopped - 1/2 cup
ginger finely chopped - 1 tsp
tamarind pulp    - 2 tbsp
red chill powder - 1 1/2 tsp
coriander powder - 1 tsp
jaggery  grated  - 1 tsp
rice flour         - 1 tsp.

 For Seasoning

cooking oil  - 3 tbsp
mustard seeds - 1 tsp
jeera          - 1 tsp
methi seeds - 1/4 tsp
urad dal     - 1/2 tsp
chana dal  - 1/2 tsp
curry leaves - 1 string

Method

  • Put a pan on the flame pour oil heat it add seasoning items as mentioned above crackle it  add curry leaves.then add onions fry it till changes it colour.
  • Add ginger & tomatoes saute it till it get mushy, then add red chilli pow.,turmeric saute it  for 4 min.,
  • Now add boiled drumsticks and little water as consistency  cook for 3 min., till it leaves oil on the sides.
  • Make a paste with rice flour add this paste to the gravy and jaggery also mix it for 2 min.,remove from the flame.Then sprinkle coriander powder .   
  • Serve it with cooked rice with papad. 




Notes

  Changes can be done as per taste.
we can use coriander leaves at the end .But here i skip as not available for this dish.

Methi mutter gravy/fenugreek leaves with green peas gravy



Ingredients

methi leaves chopped  - 1 cup
Green peas/mutter      - 1/2 cup
onions coarsely chopped - 1/2cup
tomato paste         - 1/4 cup
cashews                      - 1/4 cup
green chillies            - 4 no's or as per spicy
ginger&garlic paste  - 1 tbsp
turmeric powder      - 1/4 tsp
coriander seeds      - 1/2 tsp
cinnamon stick       - 1/2 'inch piece
cloves                   - 3 no's
elachi                   - 1 no's
cooking oil        - 3 tbsp
salt as per taste

Method

1.Wash the methi leaves and chop it.
2.Boil green peas keep it a side.
3.Make a paste of onions,green chillies,cinnamon,cashews,elachi,cloves,coriander seeds in a mixer.
4..Put a pan on the flame & heat the oil add methi leaves ,turmeric fry it for 2 min.,
5.Add ginger & garlic paste fry it then add paste saute it well till the raw smell goes.
6.Now add tomato paste & water as per consistency & mix it well and salt cook till the oil leaves sides,then add   mutter and mix it well for 3 min.,remove from the flame.
7.Serve with roti's,naan,jeera rice.

Ridge gourd curry(beerakaya pappu)


Ingredients

ridge guard  - 1 cup
onions chopped -1 tbsp
tomatoes chopped -1/2 cup
tur dal cooked  - 1/2 cup
turmeric powder - 1/4 tsp
red chilli powder - 1 tsp
green chillies slitted - 3 nos
coriander powder - 2 tsp
samber powder    - 1 tsp
garlic crushed - 2 nos
 salt as per taste.

Tempering

cooking oil   - 2 tbsp
mustard seeds - 1 tsp
urad dal      -1/2 tsp
jeera(cumin seeds) - 1 tsp
curry leaves  - 1 string
coriander leaves -1/4 cup chopped.

Method

  • Put a pan on the flame pour oil add items as mentioned in tempering except coriander leaves.let it crackle.
  • Add onions fry it till it turns pink colour add garlic,ridge gourd & tomatoes to it fry it till it gets soft.
  • Now add dry powders,salt & mix it well then add tur dal cooked add little water as per consistency saute it for 3- 4 min.,
  • Remove from the flame add sambar powder mix it add sprinkle coriander leaves.
  • Serve it as side dish with rasam or rotis or as desired combination.

   you can add spicy as per u r taste and enjoy the dish.
