Roti's

poli (sweet roti)

Ingredients

 maida (ALPF)  - 1 cup
salt  a pinch
ghee  - 1 tbsp
ghee for toasting


 For stuffing
jaggery   -1/4 cup
cardamon powder - 1/4 tsp
dry coconut   - 4 tsp

Method

Take a bowl add flour,salt ghee and Little water and make a soft dough rest for 1/2 hr.
Mix all the items as mentioned in stuffing make small balls.
Make lemon size  flour balls and flatten it with ghee greased surface and stuff the stuffing balls
and cover it make a ball.
And spread with hands on butter paper/plastic sheet make thin size sheet
And toast on tawa with ghee on both sides.

 

Maize roti's


 Ingredients

maize flour  -1 cup
wheat flour  -1 cup
ghee            - 1 tsp
salt as per taste
warm water as required for dough

Method

  Take a bowl add two flours,salt, ghee and water make a dough and rest for 1/2 hr with damped cloth.
Make rotis on any flat surface and toast with ghee/oil on tawa both sides.
Serve these rotis with tomato curry or as desired.


  Tomato curry

Ingredients
tomatoes  - 2 cups finely chopped
onions  - 1 cup finely chopped
ginger & garlic paste  - 1 tsp
turmeric powder  - 1/4 tsp
red chilli powder - 1 tsp
coriander powder - 1 tsp 
cilantro   chopped - 1/4 cup   
curry leaves   - 1 string  
salt as per taste
oil for cooking  - 3 tbsp

 For seasoning
mustard seeds  - 1/2 tsp
urad dal          - 1/2 tsp
jeera              -1/2 tsp 

Method

Put a wok heat oil add seasoning items as per above crackle it add curry leaves add onions saute it.
After onions get transparent add ginger& garlic paste, tomatoes let get mushy then add salt and all dry powders saute it and sprinkle water let it cook for 4 min.,
When the  oil leaves sides of the pan remove from the flame and sprinkle cilantro.
Serve it with rotis,chapatis, dosa or any desired.

NOTE
  In the above mentioned dish changes can be made as per spicy or as per your choice.
